How to Store Bulk Matcha: Shelf Life, Freshness and Quality Control
Matcha is a living, delicate product. The same vivid green powder that impresses your customers can turn dull, flat and bitter if it is stored incorrectly. Whether you run a café, bakery or matcha brand, good matcha storage protects your investment.
The four enemies of matcha
Light – breaks down chlorophyll, turning matcha yellow-brown
Oxygen – oxidises aroma compounds and flattens flavour
Heat – speeds up every form of degradation
Moisture – causes clumping and off-flavours
What is the shelf life of matcha?
Sealed matcha typically carries a best-before date of around 12 months or more from packing, depending on the producer and packaging. Once opened, however, matcha is at its best within a few weeks. That is why we recommend buying bulk matcha in pack sizes that match your usage.
How to store unopened matcha
Keep sealed bags and tins in the refrigerator, away from strong-smelling foods.
Before opening, let the package reach room temperature to avoid condensation.
Rotate stock: first in, first out.
How to store opened matcha
Transfer what you need to a small, opaque, airtight container.
Reseal the main bag immediately, squeezing out excess air.
Keep the working container away from espresso machines, ovens and windows.
Always use a dry spoon.
How to tell if matcha is fresh
Fresh, high-quality matcha has a bright green colour, a sweet, grassy aroma and a smooth taste. Dull olive or brownish colour, a hay-like smell or increased bitterness are signs of age or poor storage.
