What is ceremonial grade matcha?
Ceremonial grade matcha is made from the youngest, most tender shade-grown leaves of the first spring harvest (ichibancha). Shading the tea plants for several weeks before picking increases chlorophyll and the amino acid L-theanine, which gives premium matcha its vivid jade-green colour, natural sweetness and rich umami. It is designed to be drunk on its own, whisked with water as usucha (thin tea) or koicha (thick tea).

What is culinary grade matcha?
Culinary grade matcha (also called cooking grade, latte grade or ingredient grade matcha) is usually made from leaves harvested later in the season. It has a bolder, more astringent and slightly bitter profile – which is exactly what you want when matcha has to hold its flavour against milk, sugar, butter and flour.
Colour: green to olive-green
Taste: robust, grassy, more astringent
Best for: matcha lattes, smoothies, bakeries, pastry, ice cream, chocolate, RTD drinks and food manufacturing
