Ceremonial Grade — Stone-ground from the youngest, shade-grown spring leaves. Smooth, naturally sweet, and vividly green. Best for traditional tea service, premium retail, and gifting.

Culinary Grade — Harvested later in the season and ground more coarsely. Bolder and slightly more astringent — built to hold its flavour in milk, batters, and blends. Best for lattes, baking, and food & beverage manufacturing.
